Yes, you read that right: 70% apples, 30% Riesling, refermented in the bottle into something between cider and pét-nat. Jessika and Philipp of Lesom farm 1.3 hectares of stupidly steep Mosel slate entirely by hand, and Lepom is what happens when they stop taking themselves seriously for a minute. It still gets the same treatment as their serious Rieslings: spontaneous fermentation, nothing added, bottled cloudy and alive.

Dry, crunchy, dangerously easy. Picnic material of the highest order.

Drink with: salty crisps, charcuterie, hard cheese, or nothing at all.
