Dominik Held's Riesling grows on a cool west-facing slope in Rheinhessen where a steady wind slows everything down: the grapes ripen slowly, keep their acidity and never overload on sugar. Old family vines, organic farming, wild fermentation and ten milligrams of sulphur at the absolute most.

Precise, cool and quietly saline. Riesling with its jacket zipped up.
