Only 182 bottles of this exist, and some of them are in Amsterdam. Sauvignon Blanc is Dominik Held's pet project, the odd one out among his grandfather's old Rheinhessen varieties, and he gives it his full attention: organic farming, wild fermentation, patient ageing, barely any sulphur.

Crazy wine, in the best way. Drink it with oysters and thank us later.
