Lesom's answer to the question nobody asked: what if Mosel Riesling went full sparkling and stayed up all night? Steep-slope fruit from Jessika and Philipp's blue slate parcels, refermented in the bottle, aged patiently on its lees and released only when it's good and ready. Like everything they make, it's spontaneously fermented, unfiltered and about as low-intervention as sparkling wine gets.

Fine bubbles, ripe citrus, a savoury yeasty depth. Aperitif or 2AM wine. Ideally both.

Drink with: oysters, salty crisps, or your fanciest glassware.
