Dominik Held | Silvaner 2022

Silvaner is one of the grapes Dominik Held rescued from unfashionability: old vines planted by his grandfather in Dolgesheim, Rheinhessen. For his most serious wines Dominik picked exactly these underdogs, farmed organically, fermented wild, bottled with ten milligrams of sulphur at most.

Textural, stony, quietly powerful. Full disclosure: this is Flo's favourite wine in the entire shop.

Drink with: white asparagus, roast pork, or nothing at all.
