Tal means valley, a tribute to the vertiginous slopes that make Mosel farming borderline unreasonable. Jessika and Philipp work everything by hand, from high-altitude parcels down to the riverbank. The Riesling is hand-harvested, pressed straight into old 1000-litre Fuder barrels for a spontaneous ferment, then left to rest quietly on its lees for a year.

Elegant and precise, with delicate fruit over deep slate minerality. The serious one, without the stiffness.

Drink with: schnitzel, sushi, smoked trout, or soft goat cheese.
