Dominik Held makes his wines from old parcels his grandfather planted in Dolgesheim, Rheinhessen, full of varieties that fell out of fashion until Dominik brought them back with organic farming and next to no sulphur. Müller-Thurgau, Pinot Blanc, Scheurebe and Silvaner, fermented wild into one juicy whole.
