Shiro means white in Japanese, the pale twin of the Akai Rot, though this one flirts with orange: the Müller-Thurgau, Scheurebe and Silvaner all spend a week on the skins, while the Riesling is pressed straight for freshness. Niklas Rückrich, fourth-generation winemaker in Eckelsheim and one of Germany's brightest young talents, grows them on volcanic porphyry and chalky clay marl, ferments everything wild, rests the wine eleven months on the lees and bottles by gravity, unfined and unfiltered.
